This summer has been crazy busy and is continuing into the fall. Phil and I are in the process of "taking back" our routines. For me, that includes adding in time to keep blogging and adding more family stuff to the blog.
We recently changed up our grocery shopping schedule, shopping on Mondays is just too hectic after a long Sunday. That being said, we now shop on Tuesdays. We had a wonderful experience shopping today and got some great deals at BJs using our coupons.

Don't make too much fun of my choices this week. Phil is gone until Friday, so I am trying to make meals as simple as possible. I am pretty proud of myself because last week I made enough enchiladas and stuffed shells for us to eat this week and for Phil to take some with him for dinners.
I am making up for our simple dinners with some fun breakfasts. Today was chocolate chip pancakes and tomorrow french toast. We will have banana muffins one day, once they get a little riper.
Then on Saturday a special little girl turns 3 and is so excited about it. Every morning "When Daddy gets back from class it will be my birthday!" If she only knew what 5 days meant :)
I am hoping that this week won't just be surviving, but a whole lot of fun. So, off to Wal Mart we go.

Creamy Ham Casserole
We had a TON of ham leftover from Easter and about half of it is in my freezer. So today, I googled "leftover ham recipes." Very clever I know. This is the adaptation of the recipe I found. The recipe called for a few things I didn't have, but with a little ingenuity, I came up with something rather tasty. Phil even requested that I add it to our regular rotation of meals.
4 1/2 cups uncooked egg noodles
3 cups frozen broccoli florets defrosted
1 cup fat free milk
1 10 1/2 oz can cream of mushroom soup
2 cups (8 oz) shredded cheddar cheese
6 oz cream cheese
1 cup fat free milk

2 tablespoons dried onion
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups chopped lean ham
1/2 cup panko bread crumbs
2 cups chopped lean ham

Cook noodles in water for 4 minutes. Drain immediately. You do not want to over cook your noodles, otherwise you will end up with a soggy casserole.
Combine milk, soup, cheddar cheese, onion, salt, pepper and cream cheese in a large bowl; mix well with a whisk.
Add noodles, broccoli and ham and stir well.
Spread noodle mixture evenly between a 9x13 baking dish that has been coated with olive oil (or Pam).
Sprinkle the bread crumbs evenly over casserole.
Cover casserole with foil and bake at 350 degrees for 25 minutes. Uncover and bake an additional 10 minutes.

Weekly Meal Plan April 10-16
Let's just say we are having leftovers this week. We had a blast on Saturday with the deacons of our church. I am happy to say we comfortably fit 20 adults and 3 kids in our home. This house has been such a blessing to us and we plan on continuing to use it to bless others. Needless to say I over estimated how much food we needed, especially the rice. This week I will be finding new ways to use the rice and will be freezing part of it to use later. I am also freezing a tray of enchiladas for use later on, I don't think we can eat two trays in one week. Even though it is Phil's favorite meal.

Meal Plan Absence
I took a week off from posting my meal plan, mostly because every time I started the post the plan changed. It was a crazy week.
I made my plan on Sunday so I could go grocery shopping on Monday. I was so excited because it was the first time Jackson would sit in the cart instead of the car seat. That thing takes up so much room in the cart, I was read to ditch it. Unfortunately by the end of BJs he was exhausted and ended up falling asleep in the cart at Target. We still had to hit of Giant for our fresh produce and a couple good deals, but that was cut due to my sleeping little guy. We also decided to head up to Ikea to pick up a few items. This cut my plan of Salisbury steak and was replaced with hamburgers on the grill.
Tuesday Caelyn refused to take a nap and by 4:45 she was sound asleep in my lap in the recliner. This NEVER happens, so I savored the moment and sat there with her for about an hour. My nice plan of pork chops and sweet potatoes was substituted with pork chops and mac & cheese.
Wednesday I had planned Apricot Chicken (a yummy crockpot recipe I need to post soon). However, it was the mission study at church and I didn't need to cook dinner. Woohoo! However, Phil was home for lunch, so I ended up making the Salisbury steak and mashed potatoes that were set for Monday, that way he would have leftovers for the weekend.
Thursday, I made pizza as planned, but had to have Phil stop by the store on the way home to pick up a few things.
Friday, I left Jackson for the very first time for the TBC Ladies' Retreat. It was a wonderful time. I left Phil with a well stocked fridge of leftovers and all the ingredients to make Apricot Chicken.
So, my apologies for my few (and I mean very few) readers for my lack of a meal plan. I had one, we just didn't follow because life through us a lot of curve balls.

She Makes Me Smile
Two can be trying at times. Not just two kids, but the age of two. There have been many moments of...what was she thinking, followed by what was I thinking. However, we are almost through it. I don't expect things to get magically better at age 3. My little girl is an independent spirit, who loves people. Caelyn is so sweet and so compassionate.
Caelyn has started her own card ministry. Almost every morning when Jackson goes down for his nap Caelyn proclaims "Mommy, it is morning and I get to make cards." So off we go to the dining room where there are cheap stickers, markers, and note cards for her to decorate. Each one has a purpose and a recipient in mind. After she is done she asks that I put them in the envelope and then in the mailbox, so that whom ever receives the card "will be happy."
Caelyn has recently started picking out her own clothes. Pink is Caelyn favorite color, mine is purple, Phil's is green, and Jackson's blue. Why? Because she says so. Also, pink matches. Today she was wearing four shades of pink and loving every minute of it. She loves to dress her self, especially in dresses and most especially in pink.
I love her and she makes me smile.

Sorta Chicken Parmesan
I adapted this from the back of the canister of Panko bread crumbs. It was pretty tasty and pretty easy too. I meant to take a picture, but we were really hungry and I completely forgot. I took the chicken breast and pounded them out and cut them in half so the would cook faster, which worked out well for our hungry tummys. I am still working on my recipe writing skills, if you see that something is missing...please let me know.
Ingredients:
1/2 cup flour
1 egg
1 Tablespoon Milk
1/4 Teaspoon Pepper
1 Cup Panko Bread Crumbs
1/3 Cup Mozzarella or Parmesan Cheese...or whatever you have in the fridge
1 Tablespoon Olive Oil
2 Large Chicken Breast
Marinara Sauce
Favorite Pasta
Preheat Oven to 350.
Put water for pasta on to boil.
Spray a 9x13 pan with cooking spray.
Pound chicken out, it doesn't have to be thin, just a consistent thickness. Tip: I put the chicken in a ziplock bag and only close it half way. This keeps the juices from splattering everywhere. I also use either a metal water bottle or my rolling pin to pound it out, rather than buying a meat tenderizer. Cut each piece in half so you have 4 pieces total.
Put the flour in one shallow dish. Put the egg, milk, and pepper in a second shallow dish and beat until blended. Then place the bread crumbs and cheese into a third shallow dish.
First, dredge each piece of chicken in the flour and coat evenly. Next, dip the chicken in the egg mixture. Finally coat the chicken with the bread crumb and cheese mixture. Place in the baking pan.
Once you have done all four pieces sprinkle the chicken with the olive oil.
Bake the chicken for 20 minutes or until cooked through.
Once the water has come to a boil cook pasta according to directions on the package.
Warm the marinara on the stove for 10 minutes.
Serve!

March 20-26 Meal Plan
This weekend was packed full of stuff, so we enjoyed staying home yesterday and today. I am considering doing it again tomorrow if we can swing not going to the grocery store another day. It has been good for all of us to stay in our jammies as long as possible. So, here are our meals for this week.

Concoction
I really didn't feel like making Chicken Pot Pie this week. It doesn't take too long, but there are several steps and I didn't do a good job planning ahead. So, on Friday night I made this, a wonderful marinara based concoction with the food I had in my refrigerator.
I had planned on posting the recipe, but I forgot to write everything down. So I will just show you the picture. The basics are a jar of marinara sauce, some spinach, carrots, pepperoni and a bunch of meatballs. It was so good. Try it some time, dump whatever is on the verge of going bad into a pan with some spaghetti sauce and serve with your favorite pasta.
March 14-19 Meal Plan
I have a plan this week. My plan is to keep my grocery bill under $50 this week. We typically spend between $75-90, including any formula and home items. My pantry and freezer are quite full based on some great deals I got last week. I have a short list with mostly fresh items and a few things to make more baby food for Jackson.

Sitting Up
I have been pretty much convinced that Jackson will never sit up, not because he can't, but because sitting still doesn't get you anywhere. He has been scooting around and Army crawling for about a month now, but has had no real interest in sitting up. He even gets up on his hands and knees, he doesn't know what do do with it and ends up nose diving into the floor, but none the less he tries.
Today we had some progress, he stayed up long enough for me to get the camera.

Pizza!
Pizza has become one of my favorite things to make. Not anything fancy, we like it simple. I like it simple, Phil will take whatever I throw on top of it. Caelyn likes just cheese, which makes her pretty easy to please. I make pizza a lot of Wednesdays because it doesn't take very long to prepare or cook.
I like to make the dough the night before and pull it out of the fridge about 1 1/2 before it is time to cook. This lets the dough rise slowly overnight and finish up on the countertop. I adapted my recipe from the Pioneer Woman. In her cookbook she says that you can make the dough up to 3 days before or freeze it for up to 6 months. I don't have the foresight to make the dough 3 days ahead, the night before is about as good as it gets.
Here is my recipe for 2 crusts:
1 1/2 cups warm water
1 tsp yeast
4 cups flour
1 tsp sugar
3 tsp salt
1/3 cup olive oil
Pour the warm water into a bowl and sprinkle the yeast over top of the water. Let it sit while you are mixing the rest of the ingredients.
Add the flour, sugar, and salt to your mixer bowl.
Using the dough attachment, turn your mixer on low and slowly add the olive oil until just combined.
Next, stir the water and yeast mixture. Turn the mixer on low and slowly add the yeast and water. Mix until the dough forms a ball.
Add a little olive oil to a mixing bowl and place the dough inside the bowl.
If making ahead, cover with plastic wrap and place in the refrigerator
If using "immediately", cover with a damp dish towel in a warm spot and let rise 1-2 hours.
The pizza itself can be as plain or fancy as you want it. I make my own crust, but then use mostly pre-packaged toppings. I know that makes no sense, but for right now it is what works. For dinner last night I made one pepperoni and one mushroom (fresh, that I sauteed myself).
Now for the assembly and baking portion:
Preheat oven to 500 degrees.
Stretch out or roll out your dough on a rimless baking pan or pizza stone.
Add toppings and cheese.
Bake 10-12 minutes on a lower shelf until the crust is golden and the cheese is bubbly.
It may not be a good last minute recipe, but it sure beats paying for delivery.

Princess Caelyn

Happy 6 Month Birthday Jackson!
Today Jackson turns 6 months old. It has been quite the adventure and worth every minute!

Potty Humor
We started potty training a week ago. Just like every other time, unplanned and Caelyn initiated. This time, however, we followed through with it. We tried potty training twice before, in the middle of moving and having Jackson, so we gave up. This time we decided to finish it.
Day 1 was great. Day 2 we went through 4 pairs of Dora underwear before 10 am. After that things went so much smoother. We are pretty much done with the training part, there is still some hesitancy with the #2s, but they still end up where they are supposed to...is that TMI? Anyways.
We have had a lot of good laughs over the last week, mostly over poop.
Here are some of the good ones:
Caelyn running out of the bathroom "There is a giant in my potty!" - Interpretation: Her first poop, she had never really gotten a good look at one before
Phil: "How does it feel to poop on the big girl potty?"
Caelyn:"...Stinky"
Me: "Caelyn, do you need to go potty?"
Caelyn: "No, the poops are at the bottom of my belly getting ready to come out."
Caelyn: "Mommy, can I wear my princess underwear?"
Me: "No, you are already wearing Dora underwear."
10 minutes later
Caelyn: "Mommy, I am just a little bit wet, I need my new princess underwear."
I don't think it was an "accident."

Taking Initiative
Jackson has been sick for the last few days and really not interested in eating "solid" foods. We have being trying to get him to eat, but he really didn't want it. By that I mean, start screaming and letting the food slide out of his mouth.
Since he is feeling better I decided to try again today. He wasn't really into the first few bites, but wasn't screaming. Not thinking I left to help Caelyn in the bathroom and left the bowl of squash sitting on his tray.
When I came back, this is what I saw.

I guess he got tired of having to wait for me to feed him.
The bowl and the spoon were there too, but I removed them before any more damage was done while I went to get my camera.
Stuffed Pepper Update
They were okay. I think that is the best I can say about them. When we ate the leftovers they were a little better, the flavors had blended a little more. I think next time instead of hamburger I am going to use sausage and add more spinach. Here is the picture, they looked delicious...but not good enough to share.

March 6-10 Meal Plan
The best laid plans...I made a wonderful meal plan last week for this week. Then on Saturday I defrosted the chicken for Sunday's meal and left it the microwave. Unfortunately it was the last of the chicken, completely derailing my first day plan. Then on Sunday I forgot to pull out the pork for the pulled pork sandwiches on Monday. Fortunately I bough chicken this morning, so I just moved Sunday to Monday and Sunday we had leftovers.
So here is our plan.

February 27-March 5 Meal Plan
This week we are starting potty training...again. Hopefully this time we will stick to it. Caelyn has decided that she wants to wear her Dora underwear, and I told the only way is if she goes in the potty. We will see how this goes! That being said, I am trying to do recipes that don't take very long or that I can do most of the prep work during nap or during the morning, that way my time is a little more flexible.
My parents came this weekend so my dad could help Phil do some sound system work in the church. That caused some slight alterations in our meal planning, mostly we ordered pizza on Saturday instead of cooking so we could spend more time together. So, instead we had quesadillas on Sunday. I am trying a new recipe this week, Orzo Stuffed Peppers. If it turns out ok, then I will post the recipe. They look DELICIOUS and they had multi-colored packs of peppers at BJs, so it made the list.
On a side note, BJs had Panera's Baked Potato Soup in their refrigerator section. That made me so happy. I love their soup, and am hoping it will live up to my expectations.

I got two curtain tie back hooks for $2.97 each, marked down from 9.97. I am going to use those as hand towel hooks for our down stairs bathroom. Right now there is a full size towel bar, which makes no sense in a half bath.

We headed to Lowe's today to take a gander at the mis-tint paint shelf before heading to meet some friends for lunch at Chick-fil-a. Lowe's didn't have any paint that I wanted, so we took a few minutes to look around and see what kind of good deals they had going on. AND I HIT THE JACKPOT! The best deal was the hyacinth on manager's special for $2. I got one pot, which had 14 bulbs in it. I filled seven different pots with hyacinth. Five are in the living room and two are on the ledge in between the kitchen and family room.
I also got two sets of 3 baskets for $3.97 each, marked down from 17.97. Feb 21 -27 Meal Plan
Here is our meal plan for this week. I had a meeting tonight so I made dinner for Phil and Caelyn before I left. Creamed Chicken Over Biscuits is one of our favorites and a quick alternative to chicken pot pie. The recipe is only for two people, but now there are three. I just add a little more chicken and more peas which stretches it for the three of us.

Tortilla and Black Bean Pie
I was reading an article about saving money on groceries by doing a vegetarian night once a week. I don't think my husband would really be on board with that, but I am pretty sure I can slip in once and a while.
I found this recipe in my Martha Stewart "Great Food Fast" cookbook. I adapted it slightly because I didn't want too much heat so Caelyn would eat it. The recipe says that it takes about an hour from start to finish and I think it was just shy of an hour when I was finished. The beauty of this recipe is next time I can make it the night before or make it during nap time.

Tortilla and Black Bean Pie
adapted from Martha Stewart's - "Great Food Fast"
4 (10-inch) flour tortillas
1 tablespoon canola oil
1 large onion, diced
1 jalapeno chile, minced (remove seeds and ribs for less heat) {I substituted half a can of canned chopped chiles}
2 cloves garlic, minced
1/2 teaspoon ground cumin
Coarse salt and ground pepper
2 cans (15 ounces each) black beans, drained and rinsed
1 1/2 cups water
1 package (10 ounces) frozen corn
2 1/2 cups (8 ounces) shredded cheddar cheese

- Preheat oven to 400 degrees. Using a knife, trim the tortillas to fit a 9-inch springform pan or cake pan, using the bottom of the pan as a guide. Set aside.
- Heat oil in skillet over medium heat. Add onion, jalapeno, garlic, and cumin; season with salt and pepper. Cook, stirring occasionally, until onion is softened, 5 to 7 minutes.
- Add beans and water to skillet, and bring to a boil. Reduce heat to medium; simmer until liquid has almost evaporated, 8 to 10 minutes. Stir in corn and remove from heat. Season with salt and pepper.
- Fit a tortilla in bottom of pan; layer with 1/4 of the beans and 1/2 cup cheese. Repeat three times, using 1 cup cheese on top layer. Bake until hot and cheese is melted, 20 to 25 minutes. Unmold pie if using a spring form pan or serve out of pan if using a cake pan; sprinkle with scallions. To serve, slice into wedges.

Grocery Shopping
I don't like grocery shopping. I am learning about using coupons and am really getting into that part. I really like to use them at Target where I can stack manufacturers coupons and their online coupons. Did you know you could do that? I learned that recently, I used a Similac.com coupon ($3), Target.com ($2), and a formula check( $5) to buy formula last week. Saving $10 on formula is awesome.
That aside, I don't like to go to the grocery store. It was pretty easy with Caelyn, one kid, one juice cup, and a snack and we could quickly knock it out. Now with two kids it seems to be a lot harder, especially with Jackson still in the infant seat. His seat doesn't fit securely in most grocery carts so he either has to go in the basket or I have to wear him in the Mobi or Bjorn. It is quite the adventure to run errands.
However, I found this list online that makes it easier to be organized. The list is designed to be made into a cute list pad, but I found a "better" use for it. I normally go to two stores while I am shopping, BJs & some sort of grocery store or Target. I love Target, but that really needs a whole post of its own. I printed out a few of the pages and post them on the fridge. On one side I write BJs and the other side I write grocery store. That way as I discover we need something I can mark it on the list from the appropriate store. Then, when I go to the grocery store I fold it in half so I am only looking at the store I need and I tuck the coupons I am going to use inside it.
The list is also customizable, so I added the things we buy most often and take off the things we don't ever buy. I also use the empty blanks at the bottom to write the high dollar coupons that I have with me. That way I can remember to look to see if certain items are on sale. For instance, I have been carrying around a $2 Aveeno coupon with me for a couple weeks, and finally it was on sale.

My Meal Plan
I should be cooking dinner right now, but instead I am sitting here trying to decide if I need to revise my meal plan for the week. The problem is two fold; one, we have company coming at the end of the week, one of whom is a very picky eater. The second is, I did all my grocery shopping today and I really don't want to go back out. I have found that if I don't plan ahead we either end up eating quesadillas courtesy of Phil or end up eating out. By making a plan I have cut down our eating out to once a week.
So, here it is as it stands:

Change & a Little Bit of Honesty
This is the third fourth time I have started this post tonight. I keep changing my mind about what I want to post. So much has happened in our lives since Jackson's arrival I can barely keep it all straight. Quite honestly I tried to put too much on my plate and felt like I was about to collapse under it. I am a pretty organized person and can do almost anything I put my mind too, but realized over the last few months, I don't have to and can't do it all. I forget that on a weekly basis and am constantly struggling to balance God, my family, home, and church. I don't know what I would do if I also worked outside the home. I have a special appreciation for women who have to work outside the home and still care for their families.
I have been struggling with who I am. There are many things that I know, I know that I am a child of the King. I know that I am saved by grace through faith. I know that I am a mom, wife, and daughter. I know that my husband loves me and that I love him. I know that God has blessed me with two beautiful children. I know that I am a pastor's wife. That is where my struggle begins.
I grew up in a pastor's home. I occasionally felt that the church was more important than me. In my eyes we were there everytime the doors were open, always early, always staying late. My mom and dad were involved in what felt like everything. By the time I got to college I didn't want to marry a pastor. I didn't want to feel like I had to do everything. However, that is not the plan that God had for me. I met the most amazing man and fell in love with him, knowing that God had called him into ministry.
There are many books about being a pastor's wife. I have read many of them, I have read blogs and magazine articles about being a pastor's wife. I have watched other women do it, some good examples, others need a good example. I have struggled at the last two churches because I have been more concerned about what others expected me to do, than what God expected.
Here is what I have learned over that last few months. 1) It doesn't matter what I do if I don't have the right heart. If I am serving because it is what is expected, I should probably just stay home. I need to continually be in God's word and growing in my relationship with Him . 2) After God comes my family. My primary responsibility has a wife and mother is to care for my husband and children. Phil can sometimes keep "odd" hours as a pastor. Our family's schedule is often interrupted by meetings, hospital visits, and phone calls. We are learning to adapt to this new way of life. I am called to love and serve him. Next comes my two beautiful children My kids well-being comes first, if we have to miss something, it's ok. That is the thing I have struggled with the most, what is too much. I have realized that I need to do a better job managing and organizing my time so we can plan ahead be better. 3) God has given me a passion for the family. I love kids! Especially my own. Over the last two and half years I have been working at becoming a better mother and home manager. Money management is not my strongest suite, but I have working at improving.
All that to say this. I am changing my blog. Don't worry, I will still post our fun pictures and stories. However, I am going to add some "family" elements to it; recipes, money saving tips, a good book here and there. To be honest, I will probably do a lot of linking to other people's blogs. There are a lot of really smart people out there that have been doing this a lot longer than I have. I haven't figured out where I fit in at our new church, I am still getting to know people and see what the needs are. I do know that we have a lot of working moms that may need a few dinner suggestions and scoop on a good deal now and then.
I like to have a purpose. Now my blog has one too. So, more changes to come.
